I saw these gorgeous cupcakes in an Australian Women's Weekly cookbook recently, and just had to give them a try for my friends little twin daughters first birthday party.
For a bit of extra deliciousness, I baked pink strawberry flavoured cupcakes and added Rose Water essence to the pink icing - yum!
When you have baked and iced your cupcakes, here's how to decorate them and make the frangipani flowers.
You will need:
White marshmallows (Pascals or similar, regular size)
Pink crystals (for cake decorating)
Pink or White edible pearls

White marshmallows (Pascals or similar, regular size)

Method:
- Cut the marshmallows in half horizontally to create two marshmallow sized discs
- Press the sticky side of each marshmallow half into a dish of the pink crystals
- Shape each marshmallow half into a petal shape, by squeezing one side
- Repeat and create 5 petals for each cupcake
- To assemble the flower on each cupcake, overlap each petal evenly in a circular pattern, then place some of the edible pearls in the centre of the flower
