It’s Halloween Night and the nasty Witch ‘Wicked Wendy’ has flown in on her broomstick and kicked off her shoes for a quick refreshment between scary jobs!
What on earth do witches eat and drink? I hear you ask, well Pumpkin Scones with Blackberry Jam & Chantilly Cream of course! Washed down with some fresh Pumpkin Juice.
For snacks Wicked Wendy Witch and her friends are feasting on Human Eyeballs, Vampire Teeth, Bat Droppings and Dragon’s Tongues! Yum!
…And of course, her book of spells and wicked potions are never far away!
We created Wicked Wendy’s broom using Bamboo Sticks and a dried palm berry stem for the bristles. These elements tied together with some string, and you have your very own rustic witches broom. For the Pumpkin Scones, after preheating our oven to 180deg C, we combined 30g of softened Butter with 1/4 cup of Caster Sugar, until creamy. Then we finely chopped 1 cup of pumpkin and put it in the microwave for 4 minutes. While it was hot, we mashed the pumpkin until smooth, and added it to the butter mixture. Then, we beat in an egg. While those ingredients were mixing together, in a separate bowl, we sifted together 2 1/2 cups of Self Raising Flour, 1/2 teaspoon of ground ginger, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. We folded the dry mixture into the wet mixture, alternating with splashes from 1/2 cup of milk. |
When the mixture came together in a dough-like form, we turned it out on a floured surface, and kneaded it for about 2-3 minutes. Then we patted out a circle approx. 2cm thick.
We used a champagne glass to cut out the circles (why not?!) and placed them altogether on a greased baking tray.
15 minutes in a hot oven later and we had delicious freshly baked pumpkin scones ~ good enough for any evil witch and her friends!
Served warm with some Blackberry Jam & Chantilly Cream…perfectly wicked!
